Would you check Settings > General > Global Keyboard Shortcut page? You can set up 2 shortcuts which are opening the app and opening add window.
Also you can set up keyboard shortcut for every menu item in default System Settings app. Check below post.
Setting New Task options inside Settings > New Task will apply to the window. You may turn off contextual menu items and turn off due dates to add simple new tasks.
