When I create a new task for today on my iPhone or iPad, the Mac displays it as a task from yesterday. All devices are set to identical timezone and same date and time.
So what is this?

Are you using Outlook as database of Reminders? In this case, there is a bug in iOS/macOS which may show dates like you've described in some cases. I've communicated with Apple about this a lot but it hasn't been fixed yet.

yes ! This list was stored in an Exchange Server. I just moved it to iCloud and will see what happens.
