I have my lists all synching away happily, except that on my Mac app I have a list simply called Tasks. However, this list, nor it's contents, does not appear in my ios apps. Any ideas?

If the whole data is missing, you may want to check default Reminders app. You may have different account settings per device which may result in different database.
'Tasks' seems like a list from Outlook. You may want to check your account settings in default Settings app.
