If I use bulk actions to move several tasks to today or tomorrow, it adds a start date and alert, and changes the due time, all of which I have to put right manually. My default new task setting is for due date only. Is there another setting that I’ve missed that will stop this? I’m on the latest version

How are you moving tasks on bulk actions? Are you using Quick Actions? You may want to check quick actions detail.
If original task has no due date, you should check 'Settings - New Task'.
