Since I have upgraded to Big Sur whenever I complete a recurring task and then delete the completed task it (I the completed version of the recurring task) appears again after a while. What is going wrong?

Seems to be a bug. I’ll fix it on next update. Meanwhile you can choose ‘Preferences - Advanced - Delete Recently Used’ action to remove it if you need to do it immediately.
Or delete it after you complete another task.
