... is there a way to show the subtasks of a task in the e.g. today-view without opening the main-task?

Another thing is that the reminders app allows you to put tasks under another and have them show as subtasks but they show as normal tasks in Goodtasks. Maybe not much api to work with.

Would be nice to have headers as a replacement or something a long the lines like OP is asking

You can set how to show subtasks inside 'Settings - Task Display'. Select 'Subtasks: Show Details' from None/1 line/ 3 lines/ All.

@obadiahcruz, currently the API for Reminders app's subtasks are not opened.
