When I create a new task on my iPad with GT, it creates a due date with a specific time. But I do not think that Exchange sync’s the due date time, only the specific date (e.g. it syncs 12/10/19 as the due date, but not 12/10/19 at 9:00am). I see exchange supports syncing the reminder time (which appears correctly on my iphone), but when I go to my iphone to open GT and review the day, the today list will not be sorted correctly because it sorts by due date, not the reminder time. And since the time has been removed everything is grouped by the date (essentially the order the item was created instead of the reminder time). Is this just a problem with using an exchange reminders list or is there some work around?

Yes, you're right. Due date time does not properly synced on Outlook and it could cause sorting to behave differently on different devices. 
I'll keep it on the list to consider to figure out if there is good way to make it work better.
