I have had this issue on-and-off for a while now. When I create new lists I often go back to find them and discover they have disappeared.
Can someone please tell me why this is happening?
I just tested it by adding five new lists and they all disappeared a few minutes later when I returned to the application. This is on the Mac desktop app.

I tried adding projects to Reminders directly and they too disappeared from there. I have additional iCloud storage so I don't expect I am running out of space. Is there a limit to how many lists I can have?
As far as I know, I don't think there is a limit on the number of lists. You may want to troubleshoot your iCloud Reminders status with Apple.
I recommend trying it on other devices or iCloud.com webpage and see if it works or not. If it works, you may want to reconnect on the device that's not working properly. (Settings > iCloud > Reminders turn off and on)
If it doesn't work in all the area, you need to get help from Apple.

I did what you suggested and turned off Reminders in iCloud then turned it back on and now a lot of old reminders have appeared!

Unfortunately they could not restore my lists so I have lost 700 items
Does GoodTask keep a JSON file or CSV or something similar of all tasks? There is a folder of random stuff in a GoodTask folder on iCloud drive.
