I have the app on my iOS 16 device and iPadOS 16 device. I have the widgets set for the next 3 days list; however, it does not update the widget on either device when I mark an item as completed. (The widgets have been deleted and reinstalled)

Since the app can't get full access to refresh the widgets anytime, there could be cases that it's not up to date especially if you update the data outside the app.
The normal procedure of refreshing widget is done in background. So it's critical to have 'Background App Refresh' turned on for GoodTask and have GoodTask not force quitted in app switcher. This way, the app will periodically check in the background which is managed by iOS.
When you edit tasks in other devices through GoodTask, it sends a message to other devices. It may need some time though since the Reminders database needs to be synced too to get it to work. You may want to check 'Settings - Advanced - iCloud Active Sync' is turned on.
